Fish Tacos
1.75 lb Cod
2 Tbsp Chili Powder
2 tsp Coarse Salt
2 tsp Cumin
1 tsp Oregano
1/4 tsp Onion Powder
Corn (fresh or frozen)
Re-fried beans
1/2 Red Onion, diced
6 Green Onions (Scallions), cut
Cilantro
1 jalapeno, diced
Tortilla Shells
Canola Oil
Cabbage
Sour Cream
2 Limes
Guacamole
Chips and Salas
Shells
On a hot griddle, apply a small amount of oil.
Heat the shells until they are soft.
Remove and place on a plate, covered with a towel to keep warm.
Fish
Mix the dry ingredients together in a bowl.
Coat fish in lime juice.
Season fish with dry rub and pan fry until flaky.
Toppings
Heat the refried beans.
Heat the corn.
Finally done the red onion.
Cut the scallions into things slices.
Finely chopped the cilantro.
Dice the jalapeno.
Cut one lime into wedges.
Put all in individual serving dishes.
Shred the cabbage.
Mix with chipotle cream sauce.
