Ribeye Roast
Rub
2 tsp kosher salt
1 tsp sage
1tsp smoke paprika
1tsp rosemary
1tsp garlic powder
1 tsp pepper
1 tsp oregano
1 tsp thyme
4 lb ribeye roast
Rub all sides of the roast. Place on a half sheet with a baking rake.
Bring the oven to 500°F.
Roast for 20 min to develop a crust.
Drop the oven to 350°F.
Expect approx 1 additional hour of cook time.
Roast to 135°F internal temp
Rest for 30 minutes.
Slice.
