Smash Burgers

4 lbs 80/20 ground beef
3 sweet onions (sliced paper thin)
cheddar and pepper jack cheese (thick sliced)
smash burger sauce (see below)
smash burger seasoning (see below)
worcestershire sauce
butter or canola oil
16 hamburger buns
burger toppings (pickles, sliced banana or jalapeno peppers, etc)

Smash Burgers
Add worchestershire sauce to the hamburger and form the burger into approx 1/4 lb balls.
Heat the flat top grill until it is smoking hot.
Melt butter and oil the grill.
Lay down a small bed of onions for each burger.
Put a hamburger ball on each bed of onions and smash it in.
Coat the burgers in the seasoning.
Let the burger grill until it and the onions are nice and brown.
Flip (bringing the onions to the top) and brown the other side. Coat this side in seasoning too.
Add sliced cheese and let it melt, crisping up a little on the grill.
Toast the buns on the flat top with a little bit of butter.

Smash Burger Seasoning
1 Tbsp kosher salt
1 Tbsp smoked paprika
1 Tbsp onion powder
1 Tbsp garlic powder
1 Tbsp ground mustard

Smash Burger Sauce
1 cup mayo
4 Tbsp ketchup
1 Tbsp sriracha
3 tsp horseradish
2 tsp Worcestershire
2 tsp smoked paprika
2 clove garlic grated
1/2 tsp cayenne pepper
salt and pepper to taste

Mix it all in a bowl, slop it all over the burgers! Tastes good on fried potatoes too!
