Big Green Egg Pork Loin

Ingredients
Pork Loin (approx 3 – 4 lbs)
Basic BBQ Rub

This is simple and absolutely delicious.  The apple wood smoke really makes this amazing.

Defrost the pork loin and apply the bbq rub.  Cover and place in the fridge for at least 1 hr.  Then pull the loin out of the fridge and bring up to room temp.

Set your BGE up for direct grilling.  I use a large adjustable rig and cook on the highest grate.

Insert a bbq thermometer probe into the end of the loin, at the center.  Attach the grill thermometer probe to the grill grate.

Start a full chimney starter full of lump charcoal.  Dump the charcoal into the BGE, close the lid but leave the dampers open.  Start to bring the egg up to 400*F.

Once you get close to temp, drop in 2-4 chunks of apple wood.  Put the pork loin on the grill, and close the dampeners down to keep the temperature steady.

After approx 30-45 minutes (but before it hits 100*F), check to see if a nice crust has developed on bottom of the loin and flip the loin over.  Continue to cook at 400*F.

Once the loin hits 140*F, pull it off of the grill and wrap it tightly in foil.  Let it rest for at least 15 minutes.

After it has rested, slice into 1/2″ to 3/4″ chunks and enjoy.

 

Note:  Total time on the grill should be approx 1-1/2 to 2 hours.
