Chili in a Hurry

Chili in under 30 minutes.  This is not the most mind blowing chili you’ll ever make, but it is great for a quick meal.

4oz can Mild Green Chilies (La Preferdia brand is my favorite)

12 oz Tomato Paste
14 oz Beef Broth
1/2 Red Onion
1/4 White Onion 
1 1/2 lb Ground Beef
1 Poblano Pepper
1/2 Green Pepper
3 cloves Garlic 
Chips 
1Tbsp Chili Powder
2 tsp Cumin
2tsp Cilantro 
Salt
Pepper

In a Dutch Oven or large pan, brown the ground beef.  Salt and pepper to taste.

Mince the garlic, dice the Poblano and Green peppers.

Drain the beef, add the peppers and garlic.  Add a little oil if needed to the peppers.  Salt and pepper as needed.  Saute for about 5 minutes, on high heat, stirring frequently.

If making queso, start it now.

Add the tomato paste, and stir into the beef. Add the chilies, beef broth, cilantro, chili powder and cumin. Salt and pepper.  Stir it all together.  Bring this to a boil, then drop to med-high heat for about 10 minutes or until it has thickened to your preference.  

Serve with chips and your favorite hot sauce (like Frank’s Red Hot).
