Tailgate Jambalaya

Easy to make, crowd pleasing tailgate recipe. 
Appox 45 min total
Serves 6 

1 White Onion – Diced
6 Cloves Garlic – Chopped
6 Stalks Celery – Chopped
2 Bell Peppers – Diced
2 Zucchini – Diced
2 Yellow Squash – Diced
1 Lbs Andouille Sausage
1.5 Lbs Shrimp (approx 25-30 Count, Tail On, Peeled and Deveined) 
2 Boxes Zatarain’s Black Beans and Rice
Cajun Seasoning
Oil (Canola or Olive)
Water
Tabasco Sauce

1 Large Pot with Lid for Rice
1 Dutch Oven with Lid
1 Cooler
1 Grill
Charcoal

Fire It Up!
Start the charcoal (preferably in a chimney), and once hot dump into the grill.
Prep the rice per the package instructions.
Bring the rice mixture to a boil by placing the pot directly on the coals.
Once boiling, remove from the coals, replace the grill grate and simmer the rice for 25 minutes on the grill.

Prep The Rest
Cut the Adouille Sausage into chunks, about 3/8″ wide.  Put these aside.
Cut up the rest of the veggies.
Put the Onions, Celery, and Peppers together.
Put the Garlic, Zucchini, and Squash together.

 

Put It All Together
Once the rice is finished (just before all of the water is absorbed), pull it off of the grill, and place it on a hot pad in the empty cooler to stay warm.  Put the lid on the cooler.
Remove the grill grate, and place the Dutch Oven directly on the coals. 
Head a small amount of Oil in the Dutch Oven, then add the Sausage.
Brown the Sausage.
Add the Onion, Celery, and Peppers.  Mix well with the Sausage.
Salt and Pepper, and spice with some Cajun Seasoning.
Cook until the Onion just start to sweat (about 3-5 min).
Add the Garlic, Zucchini and Squash.  Season with Salt, Pepper and Cajun Seasoning.  Mix well.  Cover with the lid.  Stir occasionally.
Cook until the Squash starts to soften (about 10-15 minutes).
Add the Shrimp.  Season with Cajun Seasoning.  Place lid back on.
Once the Shrimp start to turn pink, pull the Dutch Oven from the grill.
Give the Shrimp a couple of minutes more, just to ensure they are cooked, then start to serve.

Serve It Up
Serve in a bowl with rice mix topped with meat and veggies, and a splash of Tabasco sauce, to your taste.
