1 lb Ground Italian Sausage
1 Red Bell Pepper
1 White Onion
4 Cloves Garlic
8 oz Sliced White Mushrooms
8 oz Mascarpone Cheese
1 Jar Pasta Sauce
1 Box Penne Pasta
1/2 Cup Red Wine
Salt
Pepper
Slice the pepper and the onions into thin strips.
Chop the garlic.
Start boiling the water for the pasta.
Brown and crumble the sausage in a medium sized skillet pan.
Move the sausage to a bowl. Add a little oil if needed to the pan.
Add the pepper, mushrooms and onion to the skillet.
Add salt and pepper.
Cook on high heat until the onions start to sweat.
Scrape the pan to pull up any browning from the sausage.
Add the garlic.
Add the red wine.
Continue to cook on high heat until most of the moisture is gone.
Add the sausage back to the veggies.
Drain the pasta and return to the pot.
Add the mascarpone cheese to the pasta. Stir in to melt.
Add the pasta sauce. Stir in.
Add the veggies and sausage mixture. Stir in.
