Garlic Mustard Vinaigrette

1 Cup Canola Oil (can use EVVO also for a stronger flavor)
1/2 Cup White Vinegar
1 Tbsp Dijon Mustard (approx)
1 Tbsp Honey (approx)
3 cloves Garlic (finely chopped)
1 Tbsp fresh Oregano (finely chopped) (approx)
2 tsp fresh Thyme (finely chopped) (approx)
Salt
Pepper

In a small pan, heat approx 1 Tbsp of Oil over med-high heat.
Add the Garlic and saute until toasted brown, about 5 min.

Reduce heat to low.
Add the remaining Oil, Vinegar, Mustard, Honey, and herbs to the pan.  
Heat to warm all of the ingredients, while mixing together.

Remove from heat.
Whisk the mixture until the oil emulsifies (turns creamy in color).  
Salt and pepper to taste.
