1 Large bunch Cilantro (stems cut off) (pack the food processor full)
3/4 Cup Olive Oil (EVVO)
1/4 Cup (4 Tbsp) White Vinegar
Juice of 1 Lime
1 Shallot
2 Cloves Garlic
Salt (to taste)
Water (if needed)
Use this on everything! Salads, veggies, chicken, fish, it’s good on all!
Put the shallot and garlic in the food processor, then pack it full of cilantro.
Add the Vinegar and Lime Juice and about half the oil.
Blend on Medium until the oil is emulsified and the dressing is to the desired texture.
Add water if needed.
