6 Small / 5 Medium Roma Tomatoes
1 Habanero pepper, seeds in (if you’re brave)
1 Poblano pepper, seeds removed
1 large Jalapeño pepper, seeds removed
4 cloves Garlic (peels on)
1/2 Yellow Onion
3 Scallions
1 tsp Cumin
1/2 – 1 Lemon juice (to taste)
Salt (to taste)
Preheat a baking dish to 450° while you prep your vegetables.
Arrange all of the vegetables in the dish and place about 4 inches under the broiler. Broil at 550° for about 6 minutes or until the peppers and tomatoes have a nice blistered skin on them.
After the veggies have cooked, remove the peels from the garlic. You can pull the skins off of the tomatoes or leave them on.
Add the veggies to a food processor and blend to the desired consistency (I like this one blended very well, with almost no chunks remaining.)
Add cumin. Add lemon juice and salt to taste.
